Falernum has been drunk on the Caribbean islands since the early 19th century. Originally it was probably rum sweetened with sugar cane syrup and mixed with lime juice.
Over time, more and more tasty flavors and ingredients were added, such as bitter almonds, ginger, cloves, allspice, cinnamon or vanilla. The manufacturer does not reveal which of these ingredients are exactly part of the Old Time Recipe for the Cockspur Falernum. In any case, it is a traditional recipe from the island of Barbados that has been very popular for over 100 years. Only high-quality spices are used for the Cockspur Falernum. The aromas are first extracted from them with the help of white rum. The flavored rum is then mixed with freshly squeezed lime juice.
The spice mixture only remains a secret until the bottle is opened, because as soon as the lid is opened and the Falernum is poured, an irresistible scent of almonds, cardamom, cloves and cinnamon emerges. The nutmeg aroma, on the other hand, is very subtle. The nose also detects a sweet grain note like that of sweet rolls. The various spice notes remain on the palate and combine with sweet syrup and sour-tart lime juice to create a well-balanced flavor profile. The sour-sweet note of lime syrup is particularly prominent in the finish, accompanied by a more bitter acidity reminiscent of white wine.
