Luzhou Laojiao, one of China’s most revered Baijiu producers, follows ancient, traditional brewing techniques, using only one type of grain—organic red glutinous sorghum grown in southern Sichuan. This region’s unique purple soil produces sorghum that is red, full, and pure, with high amylopectin content, making it ideal for Baijiu production. The grain’s strong water absorption and easy gelatinization contribute to the spirit’s pure, mellow taste. Luzhou Laojiao’s use of supreme-quality sorghum is a cornerstone of its authenticity and dedication to preserving traditional Baijiu-making methods.
Central to Luzhou Laojiao’s process are its historic 1573 National Cellars, fermentation pits that have been continuously producing Baijiu for over 440 years. These ancient pits are rich with microorganisms that enhance the aroma and quality of the spirit over time, earning the cellars the title of “living cultural relic.” The Baijiu undergoes solid distillation in a process passed down through 23 generations and is aged in natural caves with stable temperatures and humidity. This slow aging in clay pots allows the Baijiu to breathe, interact with its environment, and develop a smooth, complex flavor free from pungency, making each batch uniquely flavorful.
